Summer is the season for grilling and who doesn’t love the slightly smoky flavor you get from grilled meats and vegetables. One of our favorite summertime recipes is a plank-grilled salmon fillets with a flavorful glaze!

To kick off grilling season, we created this recipe for Grilled Salmon with a tasty glaze using Da Vine Foods Passion Fruit Purée. The glaze is easy to make and grilling the salmon on a wood plank is even easier! But the glaze elevates this salmon for a beautiful presentation for your guests at your backyard summer cookout!

Choosing your Plank

Deciding what type of smoky wood flavor you want on your fish makes this process a bit more adventurous. Wood planks for grilling come in a variety of types but the most popular and easiest to find is Cedar. For a recipe like this, we like to use Cedar, Maple, Alder, Apple, Cherry, or Pecan. But try out a few and decide which one is your favorite for this dish.

Making the Glaze

The glaze has 5 ingredients and is made in a saucepan on the stove prior to grilling your salmon. Most of these ingredients you will likely already have on hand. They include honey, white wine vinegar, soy sauce, fish stock (or water), and of course Da Vine Foods Passion Fruit Purée.

The glaze is made in two steps. First the Passion Fruit Purée, honey, and white wine vinegar are added to the saucepan and reduced by half, which takes about 10 minutes. Next, you will add the soy sauce and fish stock (or water) bring to a boil then simmer for another 5-6 minutes. At this point it is ready to use on your salmon while it grills. You will glaze the salmon about every 2 minutes during the grilling process.

The glaze is also great on other types of fish, chicken, duck, or pork, so if salmon isn’t your thing, you have many options to use this glaze.

Grilled Salmon with Passion Fruit Glaze

Yields: 3-4 Servings
Prep time: 40-50 Minutes
Cook time: 10-12 Minutes


For the Glaze
  • 1/2 cup Passion fruit puree
  • 1/2 cup Honey
  • 1/4 cup White wine vinegar
  • 1 tbsp Soy sauce
  • 1/4 cup fish stock or water
For the Salmon
  • 1 12 -oz Salmon Fillet - skin on
  • 1 pinch of Kosher salt and black pepper
  • 1 Grilling Plank (Cedar or another food-grade grilling plank)


Prep the Salmon
  1. Soak your wooden plank - submerged - in water for 30 minutes or more.
  2. Dry the salmon thoroughly with paper towels and put in the refrigerator skin side down and uncovered while your plank soaks. When the plank is ready, remove the fish from the fridge and add some salt and pepper to the flesh side of the fish. Place it on the plank when you are ready to grill.
  3. While you wait for your plank to soak, make the glaze.
Make the Glaze
  1. To a saucepan, add the puree, honey and vinegar and whisk over medium heat. Reduce by 50%, whisking occasionally. This may take 10 or more minutes.
  2. Once reduced, add the soy sauce and stock (or water), bring to a boil, then reduce to a simmer for 5-6 minutes. Remove from the heat and let cool for a few minutes or more before using.
  1. Heat a gas grill on high heat. When the grill is hot, turn the burner to low where you are going to place the salmon on the wood plank.
  2. With a kitchen brush, baste your salmon with the glaze while it is on the wood plank and put the entire thing on the grill over the low heat and close the lid. Baste again quickly after 2 minutes and every 2 minutes until fish tests done (6-12 minutes). To see if your salmon is done, gently squeeze the fish and if you see it separating along the flakes, it is done.
  3. You can remove the entire plank and let sit for a couple of minutes. Then, using a metal spatula, remove the fillet just above the skin, leaving the skin behind on the plank and serve.
