Cut Out Passion Fruit Sugar Cookie Recipe
These ocean themed cookies were great for an ocean themed baby shower I held. You can make these into any cut cookie shape you like. I use the same recipe for my Christmas cut out cookies that we decorate as a family.
Ingredients
- PASSION FRUIT SUGAR COOKIE RECIPE
- 3/4 C Unsalted Butter, Softened (170 g)
- 1 C Granulated Sugar (200 g)
- 1 Large Egg
- 1 Tbl Passion Fruit Puree
- 2 1/2 C Unbleached, all-purpose flour (275-315 g)
- 1/2 tsp Salt
- ROYAL ICING RECIPE
- 8 C Powdered Sugar (880 g)
- 6 Tbl Meringue Powder
- 1/2-1 C Warm Water
- 1 Tbl Clear Corn Syrup (this is optional but will add shine to the icing)
- 2 tsp Passion Fruit Puree + up to 1/2 C if desired
- Pinch of salt
Instructions
- PASSION FRUIT SUGAR COOKIE RECIPE
- Mix butter in a stand mixer on medium speed for 1-2 minutes. Color will lighten slightly.
- Add sugar and mix on medium speed until creamy.
- Add egg and passion fruit puree and mix on medium speed until combined.
- In a large bowl, whisk flour and salt together.
- Add flour mixture 1/2 cup at a time to wet ingredients and mix at low speed until combined. Repeat until the dough comes together and sides of bowl are clean.
- Wrap softball sized balls of dough in plastic wrap and chill for 30 minutes.
- Preheat oven to 350 F degrees.
- Roll dough until approximately 1/4" thick on floured surface or between two pieces of parchment paper. Cut out shapes and place on parchment-lined baking sheet.
- If you live in a hot climate, I recommend chilling the unbaked cookies again for an additional 30 minutes. This will minimize spreading during the cooking process.
- Bake for 10-12 minutes turning the pan after about 6 minutes. Bake until the bottom edges are slightly browned.
- Let set on tray for about 5 minutes before moving to a cooling rack.
- Decorate as desired.
- ROYAL ICING RECIPE
- Whisk meringue powder with 1/2 cup of warm water until dissolved.
- Add meringue powder mixture and remaining ingredients to stand mixer and mix using the paddle attachment. Start on low until powdered sugar is mostly combined. Move up to high for 5 minutes.
- Add gel food coloring and thin using additional passion fruit puree or water.
- Detail - Toothpaste consistency
- Flood - 10-15 Second Icing
- Hybrid - 20-25 Second Icing
Notes
You can freeze the dough for up to 6 months by wrapping in plastic wrap and put in an air tight container.
Defrost 1 hour before using.
You can freeze the icing for up to 6 months. Defrost for 30 minutes before using.
