These ocean themed cookies were great for an ocean themed baby shower I held. You can make these into any cut cookie shape you like. I use the same recipe for my Christmas cut out cookies that we decorate as a family.

Cut Out Passion Fruit Sugar Cookie Recipe

Yields: 15 medium-sized cookies

Ingredients

PASSION FRUIT SUGAR COOKIE RECIPE
  • 3/4 cup Unsalted Butter, Softened (170 g)
  • 1 cup Granulated Sugar (200 g)
  • 1 Large Egg
  • 1 Tbl Passion Fruit Puree
  • 2 1/2 cup Unbleached, all-purpose flour (275-315 g)
  • 1/2 tsp Salt
ROYAL ICING RECIPE
  • 8 cup Powdered Sugar (880 g)
  • 6 Tbl Meringue Powder
  • 1/2 -1 cup Warm Water
  • 1 Tbl Clear Corn Syrup (this is optional but will add shine to the icing)
  • 2 tsp Passion Fruit Puree + up to 1/2 cup if desired
  • 1 Pinch of salt

Instructions

PASSION FRUIT SUGAR COOKIE RECIPE
  1. Mix butter in a stand mixer on medium speed for 1-2 minutes. Color will lighten slightly.
  2. Add sugar and mix on medium speed until creamy.
  3. Add egg and passion fruit puree and mix on medium speed until combined.
  4. In a large bowl, whisk flour and salt together.
  5. Add flour mixture 1/2 cup at a time to wet ingredients and mix at low speed until combined. Repeat until the dough comes together and sides of bowl are clean.
  6. Wrap softball sized balls of dough in plastic wrap and chill for 30 minutes.
  7. Preheat oven to 350 F degrees.
  8. Roll dough until approximately 1/4" thick on floured surface or between two pieces of parchment paper. Cut out shapes and place on parchment-lined baking sheet.
  9. If you live in a hot climate, I recommend chilling the unbaked cookies again for an additional 30 minutes. This will minimize spreading during the cooking process.
  10. Bake for 10-12 minutes turning the pan after about 6 minutes. Bake until the bottom edges are slightly browned.
  11. Let set on tray for about 5 minutes before moving to a cooling rack.
  12. Decorate as desired.
ROYAL ICING RECIPE
  1. Whisk meringue powder with 1/2 cup of warm water until dissolved.
  2. Add meringue powder mixture and remaining ingredients to stand mixer and mix using the paddle attachment. Start on low until powdered sugar is mostly combined. Move up to high for 5 minutes.
  3. Add gel food coloring and thin using additional passion fruit puree or water.
  4. Detail - Toothpaste consistency
  5. Flood - 10-15 Second Icing
  6. Hybrid - 20-25 Second Icing
