Tabouli Passion Fruit Salad
- 1 Cup Bulgur
- 2 Cups Water
- 2 Tbl Olive Oil
- 1 Diced Cucumber
- 1 Diced Tomato
- ¼ Cup Chopped Fresh Mint
- ½ Cup Chopped Fresh Parsley
- 3-4 Finely Chopped Green Onions
- ¼ Cup Lilikoi Puree
- Salt & Pepper to Taste
- Boil the water.
- Add the bulgur and remove from stove. Let it sit covered for 20-30 minutes.
- Transfer to a large bowl, then stir in the remaining ingredients.
- Season to taste with salt and pepper.
You can add radish and garlic to taste.
A box tabouli kit can be used. Prepare as directed on the box then add all the other ingredients.
