Lilikoi Candied Bacon With Mac Nuts

  • ¼ Cup Water
  • ¼ Cup Sugar
  • ¼ Cup Lilikoi Puree
  • 1 Pound of Bacon
  • ½ Cup Macadamia Nuts
  • Skewers (if using wooden skewers be sure to soak them in water before using)

  1. Preheat Oven to 375 Degrees
  2. In a small saucepan mix water, sugar and lilikoi puree.
  3. Bring to a boil and cook down for 5 minutes.
  4. While that is boiling put bacon slices on skewers.
  5. Brush liquid mixture onto the bacon.
  6. Line a baking sheet with foil and put a cooling rack on top of it.
  7. Put bacon skewers on the cooling rack and bake at 375 degrees for 5-8 minutes.
  8. While bacon is in the oven put the macadamia nuts in a zip lock bag.
  9. Use a rolling pin to crush the mac nuts.
  10. Pull bacon out of oven and brush with the liquid mixture again.
  11. Flip bacon and brush bottom side with liquid mixture.
  12. Sprinkle macadamia nuts on top of bacon.
  13. Put bacon back in the oven and bake for another 5-8 minutes until you get your desired level of crispiness.
