Kalua pork is one of the favorite local foods in Hawaii. It goes great with rice, cabbage, lau lau, and other Hawaiian foods. The pineapple BBQ sauce gives the sandwiches a nice, tangy taste and pairs well with the lilikoi. Try it with our Passion Fruit Coleslaw as a topper for these sliders. Delish!

Lilikoi Kalua Pork Sliders with Pineapple BBQ Sauce

Ingredients

Kalua Pork:
  • 1 - 5 lb pork butt
  • 1 - 2 tablespoons liquid smoke
  • 1 - 2 1/2 tablespoons Hawaiian salt (or sea salt)
  • 1 - 1 large banana leaf
Lilikoi Pineapple BBQ Sauce:
  • 1 - 1/12 cup cider vinegar
  • 1 - 1 cup pineapple juice
  • 1 - 1 cup ketchup
  • 1 - 3 tablespoons soy sauce
  • 1 - 3 tablespoons honey
  • 1 - 3 tablespoons brown sugar
  • 1 - 2 teaspoons liquid smoke
  • 1 - 2 teaspoons Worcestershire sauce
  • 1 - 1 1/2 cups Lilikoi juice (or passion fruit juice)
  • 1 - 3/4 teaspoon cayenne pepper
Pineapple Cole Slaw
  • 1 - 1 head green cabbage, shredded
  • 1 - 5 carrots, shredded
  • 1 - 2 cups pineapple, chopped
  • 1 - 1/2 cup mayo
  • 1 - 1/2 cup pineapple juice
  • 1 - 1/4 cup white vinegar
  • 1 - 1 tablespoon sugar
  • 1 - 1/2 teaspoon ginger

Instructions

  1. Pre-heat your oven to 325 degrees F or 160 degrees C.
  2. Kalua Pork:
  3. - Cut long and shallow cuts into the pork butt. Rub the liquid smoke and salt into the pork.
  4. - Use the banana leaf to wrap the pork around. Secure it with kitchen twine and then repeat with foil.
  5. - Pour about an inch of water into a roasting pan. Roast the pork for about 3 1/2 hours (or 45 minutes for each pound).
  6. - Shred the pork with forks and mix it into the BBQ sauce. Scoop on Hawaiian taro rolls or sweet bread, with a side of coleslaw.
  7. Lilikoi Pineapple BBQ Sauce:
  8. - Set aside the lilikoi juice.
  9. - Mix all ingredients together in a saucepan. Whisk mixture and boil until the sauce achieves thickness. Lower the heat and simmer for about 20 minutes.
  10. - Pour in the lilikoi juice and reduce to 2 cups.
  11. Pineapple Cole Slaw:
  12. - Combine the pineapple juice, mayonnaise, sugar, ginger, and vinegar together.
  13. - Mix thoroughly with the chopped pineapple, cabbage, and carrots.
