You can’t go wrong with the combo of passion fruit and poppy seeds—it really takes the cake! This loaf is just as tasty for breakfast as it is for dessert (or anytime you crave a treat!). We’ve been meaning to add this beauty to our recipe collection for a while, and trust me, it’s been worth the wait. To kick things up a notch, we’ve drizzled it with a zesty passion fruit glaze and added some thin lemon slices on top for a little extra flair.

Did your loaf crack a bit in the middle? No biggie! That’s actually a good thing—it means your bread rose just right. The top bakes faster than the inside, and as the center cooks, it pushes out air, which can create a nice crack either right in the middle or just off to the side. If yours doesn’t have a big crack, no stress! So many factors come into play, like your specific oven, the heat level, how long you bake it, and where you’ve placed the rack.

Passion Fruit Poppyseed Loaf

Yields: 9 servings
Prep time: 25 minutes
Cook time: 1 hour

Ingredients

Loaf:
  • 1 3/4 cups unbleached all-purpose flour
  • 1 Tbl poppy seeds
  • 2 tsp baking powder
  • 1/2 (115 g) cup unsalted butter, softened
  • 1 1/4 cups sugar
  • 2 limes, zest finely grated
  • 3 eggs
  • 1/2 cup unsweetened passion fruit juice
  • 1/4 cup milk
Glaze:
  • 1 cup icing sugar
  • 2 Tbl passion fruit puree

Instructions

Loaf:
  1. With the rack in the middle position, preheat the oven to 350°F (180°C).
  2. Butter a 4 x 10-inch (10 x 25 cm), 6-cup (1.5 litre) loaf pan.
  3. Line the pan with parchment paper, letting it hang over two sides.
  4. In a bowl, whisk together the flour, poppy seeds and baking powder.
  5. In another bowl, cream the butter, sugar and lime zest with an electric mixer.
  6. Add the eggs and beat until smooth.
  7. Stir in the dry ingredients alternately with the passion fruit juice and milk.
  8. Spoon the batter into the prepared pan.
  9. Bake for 1 hour or until a toothpick inserted into the center of the cake comes out clean.
  10. Let cool completely on a wire rack before removing from pan.
Glaze:
  1. Put icing sugar and passion fruit puree into a bowl.
  2. Stir until sugar is absorbed.
  3. Drizzle over cooled loaf.
