This Strawberry Margarita Pie with Passion Fruit Curd and a Salted Crust was so fun to make. I’ve been doing a virtual bake along, every other weekend, with my daughter in Seattle. Neither of us have been big pie makers but we have decided we are going to master pie crust. Each time we make pie, our crusts get better. I was incredibly pleased with how this one turned out!
This pie has a Strawberry Margarita flavor with a passion Fruit topper. The rim has a salted crust. It has the perfect amount of Summer refreshing flavor along with a great dessert treat. Can we talk about that salt rim on the pie crust? How fun is that?!

I adapted the recipe from the book #thenewpie. I love that they have science the heck out of pie making and introduced some highly creative flavors. Traditional apple is still there but so is Mint & Chip and Thai Tea along with this Strawberry Margarita Pie. It’s a must have if you want to perfect your pie making skills.
Naturally, I had to make the curd topping a passion fruit curd! I used our Lilikoi Puree and the flavors paired deliciously.
