Passion Fruit Lemon Budino Recipe

This quick and easy dessert is great for company. You can make it ahead and have it ready and waiting in the fridge.

Featuring: Passion Fruit Puree

You may be asking, “what is a budino?” I know when I first heard the word I didn’t even know if it was a food much less a delicious dessert. It turns out, a Budino is a sweet Italian dish, usually rich and creamy like a custard or pudding. This recipe won’t disappoint. It has a rich and creamy texture along with the tangy flavors of Passion Fruit and Lemon. I chose to serve it cold with a passion fruit whip cream.

Passion Fruit Lemon Budino Recipe

Yields: 6 Servings
Prep time: 50 Minutes
Cook time: 30 Minutes

Ingredients

  • 1/2 Cup plus 2 Tbl Sugar
  • 3 Large Eggs, Separated
  • 1/4 Cup All Purpose Flour
  • 1/4 Cup Passion Fruit Puree
  • 2 Tbl Fresh Lemon Juice
  • 2 Tbl Finely Grated Lemon Peel (I used Meyer Lemon)
  • 3/4 Cup plus 2 Tbl Whole Milk
  • 1/4 tsp Salt
  • 1 Passion Fruit Whipped Cream (optional)

Instructions

Preheat oven to 350 Degrees F
  1. Butter six ¾ cup custard cups or ramekins
  2. Combine ½ cup sugar, egg yolks, flour, passion fruit puree, lemon juice and lemon peel in a large bowl. Whisk until well blended. Whisk in milk
  3. Using an electric mixer, beat egg whites and salt in a medium bowl until frothy
  4. Gradually add remaining 2 Tbl sugar and beat until soft peaks form
  5. Fold beaten egg whites into lemon mixture in 2 additions
  6. Divide mixture among prepared custard cups and place in a roasting pan
  7. Pour enough hot water into roasting pan to come halfway up sides of custard cups
  8. Bake puddings until tops are golden and spring bake when lightly touched. About 30 minutes
  9. Remove cups from water. Serve warm or cold with whipped cream, if desired
