Passion Fruit Lemon Budino Recipe
You may be asking, "what is a budino?" I know when I first heard the word I didn't even know if it was a food much less a delicious dessert. It turns out, a Budino is a sweet Italian dish, usually rich and creamy like a custard or pudding. This recipe won't disappoint. It has a rich and creamy texture along with the tangy flavors of Passion Fruit and Lemon. I chose to serve it cold with a passion fruit whip cream.

Ingredients
- ½ Cup plus 2 Tbl Sugar
- 3 Large Eggs, Separated
- ¼ Cup All Purpose Flour
- ¼ Cup Passion Fruit Puree
- 2 Tbl Fresh Lemon Juice
- 2 Tbl Finely Grated Lemon Peel (I used Meyer Lemon)
- ¾ Cup plus 2 Tbl Whole Milk
- ¼ tsp Salt
- Passion Fruit Whipped Cream (optional)
Instructions

- Preheat oven to 350 Degrees F
- Butter six ¾ cup custard cups or ramekins
- Combine ½ cup sugar, egg yolks, flour, passion fruit puree, lemon juice and lemon peel in a large bowl. Whisk until well blended. Whisk in milk
- Using an electric mixer, beat egg whites and salt in a medium bowl until frothy
- Gradually add remaining 2 Tbl sugar and beat until soft peaks form
- Fold beaten egg whites into lemon mixture in 2 additions
- Divide mixture among prepared custard cups and place in a roasting pan
- Pour enough hot water into roasting pan to come halfway up sides of custard cups
- Bake puddings until tops are golden and spring bake when lightly touched. About 30 minutes
- Remove cups from water. Serve warm or cold with whipped cream, if desired
Notes
I chose to make a passion fruit whipped cream. I used 1 ½ Cups Heavy Whipping Cream, ½ Cup Powdered Sugar and 2 tsp Passion Fruit Puree. Put all ingredients into a chilled metal bowl and whip with a hand mixer until stiff peaks are formed. You can pipe or place on custards with a tablespoon dollop.
