The perfect amount of sweet and savory make up these soft and chewy Rosemary Passion Fruit Sugar Cookies, that stay soft! A must make dessert for Fall or any time!

Rosemary Passion Fruit Sugar Cookie Recipe

Yields: 2 dozen

Prep time: 3 hours

Cook time: 12 mins

Ingredients

1/2 cup Butter, Unsalted
1/4 cup Sugar
1 Large Egg
1/2 tsp Vanilla Extract
2 Tbl Passion Fruit Puree
1 Lime, zest only
1 Tbl Finely Chopped Rosemary
2 cup All Purpose Flour
1 tsp Baking Soda
1/4 tsp Salt

Instructions

Preheat oven to 350 degrees Fahrenheit
Cream butter and sugar together until light and fluffy, about 4 minutes
Add egg, vanilla extract, Passion Fruit Puree, lime zest, and rosemary. Stir to combine.
Stir in Flour, baking soda and salt, just until combined
Cover & refrigerate until thoroughly chilled (2-4 hours)
Line baking sheet with parchment paper
Use aa medium scoop to portion dough and shape into a ball
Coat well in remaining ¼ cup of sugar
Space 3 inches apart on prepared baking sheet
Bake 12-14 minutes or until the bottoms begin to brown
Remove from oven and let cool on a cooling rack about 5 minutes
