As a young girl, Saturday mornings were my favorite. I was allowed to get up and watch early morning cartoons! Not only that but, I would get up with my dad who would head to the kitchen to start breakfast. I remember helping him mix the pancake batter with a hand mixer.
Saturday morning breakfasts were the best! Dad almost always made banana pancakes. Hot, fluffy, buttermilk pancakes with little chunks of smashed bananas in them. If by any chance we had been somewhere that had an interesting fruit flavored syrup, we would get to use the special syrup. Something much more exciting and interesting than plain maple syrup, in my opinion.
When it came time to create a new recipe for Da Vine Foods, the idea of a Passion Fruit Syrup brought back memories of Saturday mornings with Dad. When I added the unsweetened shredded coconut to the tangy lilikoi, it gave the syrup that extra tropical flair I was looking for.
