Cold Passion Fruit Soup Recipe

Normally, I’m not a fan of cold soup. Soup has traditionally been something that I eat in the winter when it is cold. So, when I found this recipe on David Lebovitz site called living the sweet life in Paris, I was skeptical. Nonetheless, I went ahead and made it with only a few changes. I was incredibly surprised at how much I enjoyed this cold soup.

This is a fun chance to visit your nearest ethnic market and experiment with any unusual fruit you might find there. You can use canned for fruit that is not in season. Try something new, you never know when you might find your favorite fruit that you didn’t even know about.

When it comes to the soup base itself it is wonderfully spicy. Not in the way a hot sauce is spicy but full of spice flavors. Star anise, cloves, lemongrass, peppercorns, and ginger as well as passion fruit puree, to name a few. When you combine the base with the tropical fruits, the flavors are fantastic!

Be sure to chill the serving bowls in advance so everything stays refreshingly icy-cold. If you can’t find some of the tropical fruits I recommend, you can use whatever combination of fruits you like.

Our Passion Fruit Puree is in the soup base. It adds to the overall flavor of the soup causing it to have a finish that makes you want more. Keep in mind that if you can’t find these particular tropical fruits, use whatever you have on hand. Variety is a lot more fun than all one fruit.
