Rosemary Passion Fruit Sugar Cookie Recipe

Ingredients
- ½ C Butter, Unsalted
- 1 ¼ C Sugar
- 1 Large Egg
- ½ tsp Vanilla Extract
- 2 Tbl Passion Fruit Puree
- 1 Lime, zest only
- 1 Tbl Finely Chopped Rosemary
- 2 C All Purpose Flour
- 1 tsp Baking Soda
- ¼ tsp Salt
Instructions
- Preheat oven to 350 degrees Fahrenheit
- Cream butter and sugar together until light and fluffy, about 4 minutes
- Add egg, vanilla extract, Passion Fruit Puree, lime zest, and rosemary. Stir to combine.
- Stir in Flour, baking soda and salt, just until combined
- Cover & refrigerate until thoroughly chilled (2-4 hours)
- Line baking sheet with parchment paper
- Use aa medium scoop to portion dough and shape into a ball
- Coat well in remaining ¼ cup of sugar
- Space 3 inches apart on prepared baking sheet
- Bake 12-14 minutes or until the bottoms begin to brown
- Remove from oven and let cool on a cooling rack about 5 minutes
