Can you believe we have a national sugar cookie day? Every year on July 9th it gives me the perfect reason to indulge in one of my favorite guilty pleasures (not that I really ever need a reason to enjoy cookies). Cookies just might be one of my favorite foods, and adding the passion fruit puree to the recipe really kicks it up a notch.
The first time I made this recipe I took it to a special event. It was a breakfast potluck (no shame!). They were gone before the bacon!!! When everyone realized they had passion fruit in them, their eyes lit up!
The cookies themselves have passion fruit (lilikoi) puree in them. If you want an even stronger passion fruit taste, you can frost them with our frosted passion fruit sugar cookie recipe. You may want to add a few drops of food coloring to the frosting to give it a fun passion fruit yellow color. It would make a nice contrast to the cookies.
