This is a great question. Now that the majority of my clients are online and not at a Farmer’s Market, face to face, this seems to be my most popular question. My answer is, it depends on where you get it from and how pure it is.
Let’s start with the easiest. You happened upon a passion fruit vine. You picked some fruit and took it home with you to juice. Learn how to juice passion fruit HERE if you don’t know how already.. Like any fresh fruit juice that hasn’t been pasteurized, you will have about 3-4 days in the refrigerator before it starts to ferment. Before it ferments, I recommend putting it into ice cube trays and freezing it.
If you’ve purchased it, as a concentrate, from a specialty grocery store’s freezer, then you have 6-12 months to use it. Once you reconstitute the juice, it will be good for about 1-2 weeks in your refrigerator. They usually contain added sugar and other preservatives so you may even get a bit more time out of it, depending on what you purchased.
When you purchase the passion fruit puree from Da Vine Foods, it is 100% pure and shelf stable. It is freshest if used within 1 year of purchase. Once you have opened a bottle, you will need to keep it in your refrigerator. When you keep it refrigerated, you can think of your puree like orange juice, you have 1-2 weeks before it starts to ferment. If you don’t want the fermentation process to start, you can always freeze it for up to 12 months, like I mentioned above.
I like to freeze my leftovers in ½ cup or 1 ounce increments because that is what most of my recipes call for.
