Passion Fruit Cheesecake

Yields: 1 Cheesecake

Ingredients

Crust: 2 Packages of Graham Crackers
  • 1 Crust: 1/2 cup sugar
  • 1 Crust: 1 tsp Salt
  • 1 Crust: 1 tsp Cinnamon
  • 1 Crust: 1/2 cup Mac nuts
  • 1 Crust: 1/2 cup Butter (softened)
  • 1 Cheesecake: 2 lbs Cream cheese
  • 1 Cheesecake: 4 Eggs
  • 1 Cheesecake: 3/4 cup Sugar
  • 1 Cheesecake: 1/2 cup Whipping cream
  • 1 Cheesecake: 1 tsp Vanilla
  • 1 Cheesecake: 1/2 tsp Salt
  • 1 Cheesecake: 1/2 -3/4 cup Lilikoi puree to taste

Instructions

Preheat oven to 325 degrees
  1. Crust: Blend well in a food processor
  2. Crust: Press in bottom of pie plate or spring form pan
  3. Crust: Bake for 15 minutes
  4. Cheesecake: Beat all remaining ingredients except the eggs until well blended
  5. Cheesecake: Add eggs, 1 at a time, just until blended
  6. Cheesecake: Pour over crust
  7. Cheesecake: Bake for 55 minutes or until center is almost set
  8. Cheesecake: Run knife around rim of pat to loosen. Cool before removing.
  9. Cheesecake: Refrigerate cheesecake for 4 hours
  10. Drizzle Lilikoi Coconut Syrup over each piece or Spread Lilikoi Coconut Butter over entire cheesecake
