Passion Fruit Cake Cupcakes
- 1 ½ Cups Butter
- 3 Cups Sugar
- 12 Egg yolks
- 3 Cups Flour
- 1 tsp Baking Powder
- 1 tsp Salt
- 6 oz Lilikoi Puree
- 2 tsp Vanilla
- Preheat oven to 325°
- Blend butter, sugar, yolks, Lilikoi Puree and vanilla in one bowl.
- Blend Salt, baking powder and flour in another bowl.
- Mix both together and pour into heavy buttered pan.
- Pour mixture into a bread pan and bake 60-70 minutes.
If doing muffins only 20-25 minutes.
The Passion Fruit Cup Cakes are delicious with or without frosting. I also like to drizzle a small amount of our Lilikoi Coconut Syrup over them instead of frosting them.
