Lilikoi Chia Seed Dressing

A lot of clients at the farmer’s market ask me why I don’t sell a salad dressing.  While the Lilikoi Chili Pepper Sauce is a great dressing on its own, you can also make a delicious lilikoi dressing with just a few simple ingredients. Dressings are easier than they seem and so delicious when made fresh.

The Passion Fruit Puree is high in vitamin C, just like citrus fruits. The chia seeds help your health in a number of ways. They help stabilize your blood sugar and they keep you satiated as well as having healthy oils in them.

For this recipe, you can throw all the ingredients into a food processor or blender, put the lid on, and press start. That’s it, the dressing is ready. I told you it would be easy.

Be sure to refrigerate what you don’t use. It is good for up to a week in the fridge.

I have used this dressing on a regular green dinner salad, in a pasta salad and in a quinoa salad with wonderful results.

Ingredients

  • 2 Tbl Lilikoi Puree
  • 1 Clove garlic
  • 1 pinch of salt
  • 2 tsp Dijon Mustard of good quality
  • 3/4 Cup Grape seed oil or light flavored olive oil
  • 2 Tbl Red Wine Vinegar
  • 1 Tbl Chia Seeds
  • 1 Tbl Sugar
  • 1 tsp Honey

Instructions

  1. In a small food processor or blender add all ingredients but the chia seeds. Blend till combined. The dressing should be a nice thick vibrant yellow color.
  2. Mix in chia seeds and then pour into your dressing container.

Notes

Store in the fridge until you are ready to serve.
