Rosemary Passion Fruit Sugar Cookies

Rosemary Passion Fruit Sugar Cookie Recipe

Yields: 2 dozen

Ingredients

  • 1/2 cup Butter, Unsalted
  • 1 1/4 cup Sugar
  • 1 Large Egg
  • 1/2 tsp Vanilla Extract
  • 2 Tbl Passion Fruit Puree
  • 1 Lime, zest only
  • 1 Tbl Finely Chopped Rosemary
  • 2 cup All Purpose Flour
  • 1 tsp Baking Soda
  • 1/4 tsp Salt

Instructions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Cream butter and sugar together until light and fluffy, about 4 minutes
  3. Add egg, vanilla extract, Passion Fruit Puree, lime zest, and rosemary. Stir to combine.
  4. Stir in Flour, baking soda and salt, just until combined
  5. Cover & refrigerate until thoroughly chilled (2-4 hours)
  6. Line baking sheet with parchment paper
  7. Use aa medium scoop to portion dough and shape into a ball
  8. Coat well in remaining ¼ cup of sugar
  9. Space 3 inches apart on prepared baking sheet
  10. Bake 12-14 minutes or until the bottoms begin to brown
  11. Remove from oven and let cool on a cooling rack about 5 minutes
